Naturally grown in raised beds and harvested by hand, these red shallots are a delicious addition to any meal. Sweeter and milder than onion with a touch of garlic in taste profile, they are wonderful sautéed, baked or eaten raw. Under proper conditions (cool, dark and dry) they can last on the shelf for up to a year!

We sell our garlic in two sizes: large and medium/small. Typically, larger bulbs are used as seed stock and the medium/small bulbs (“culinary garlic”) are for eating. However, they all taste equally great and cooking with the larger cloves is a treat so feel free to try them!

About Our Garlic
Our garlic is hand planted in October, just before the snow begins to fall. We use raised beds with soil from the ranch
fortified with our own compost and organic fertilizer (See https://keeneorganics.com/product/garlicfertilizer/). The garlic, bedded with straw, spends the winter under heavy snow and emerges first thing after snow melt (typically
April). For the hardneck varieties,
scapes are harvested in June (see https://www.chatelaine.com/food/garlic-scapes-faq/). If you’ve not tried garlic scapes you must – they are a real treat. Check back with us in May to order – they go quickly.
The garlic bulbs are harvested in late July or early August, depending on the year. They are hung to dry for several weeks, cleaned and trimmed by hand, and then are ready for shipping for you to enjoy!

As a small business we do not (yet) have an organic certification. However, we can attest that our garlic is naturally grown, with only organic fertilizer and no pesticides or other artificial products.
